Cauliflower (Brassica cauliflora Lizg.) Is divided into two subspecies: simplex (subsp. Simplex) and abortion (subsp.abortiva).

Among the varieties of cabbage, cauliflower ranks first in terms of the value of its composition. It contains 9.65% dry matter, 1.2-5.0% sugar, up to 1.4% fiber, 1.5-3.3% protein.
